Cost – 1 or 2 night residential courses from £60 to £200 – full details on a following page.  Cost is per person and includes accommodation, all meals and ingredients, teaching time and recipe handouts.  The Cookery Courses are all residential and are designed for 2-4 persons.  Normal B&B rate applies for partners staying in the same room but not on the course and they may join us for meals at no extra cost.

Dates – 1 or 2 consecutive nights of your own choice but not Bank Holiday weekends.  Check the availability chart on our website to find 1 or 2 nights when we don’t already have B&B guests, then send us an e-mail or give us a ring to confirm that the dates are OK.  Those nights will then be reserved for cookery course bookings only and will be shown on the chart as ‘CC’.

Breakfasts on Cookery Courses are restricted to a limited menu to maximise teaching time.  Course times have been designed to fit around our family commitments and turnaround of B&B rooms.  The ‘Free Time’ in option 4 will allow you to take a walk, go shopping in Kendal, relax in the garden, etc.

Booking & Payment - Fill in the course registration form and send us a cheque deposit of £30 payable to ‘S. Wilkinson’.  The remainder is payable on arrival.  We can also supply Gift Vouchers (see website).

COURSE CONTENT

Here we list some suggested themes but we would be happy to tailor the course to suit your needs, eg gluten-free, soya free, cakes, savouries, salads, etc.  It will be mostly hands-on and you’ll be tasting everything you’ve made.  On the last day you'll be leaving with some samples and a collection of recipe sheets.

New Vegan - Finding alternatives to eggs, milk, cheese and gelatine in simple everyday meals.

Already Vegan - Inspiring ways of adding value and colour to banish the myth that vegan food’s bland and

boring.

Tried and Tested - Reliable breakfast and evening meal recipes from our menu which hasn’t changed for 17 years!

Tofu and Sea Vegetables - Exciting introduction to a variety of tofus and seaweeds so you know what to do with them (at last).

Cakes – From teatime treats to birthdays, weddings and Easter; there is usually a vegan alternative if you know how.

Christmas - Mince pies, trifle, chestnuts, cranberries, sitting down to the full roast dinner and even a chocolate log topped off with a plastic robin.

Hygiene - Just a reminder that good standards of hygiene will be required in the kitchen.  Please wash hands before handling food, remove jewellery and tie back long hair.  Wear sensible shoes and keep cuts covered, etc.  Clean aprons will be provided.  You may keep your mobile phone handy and switched on if you need to.

FOX HALL VEGAN COOKERY COURSES – A little bit about us and our kitchen

As far as we know, when we opened in September 1990, Fox Hall Vegan B&B was the first true vegan B&B in the country.  Since then, we have welcomed guests from all over the world, given out countless recipes and advice and been asked over and over again when we are going to produce a recipe book and give cookery courses.

In December 2007 we moved from Fox Hall in Sedgwick to a much bigger house to enable our business to grow.  It has taken us 7 months to complete the transformation of Prizet Stables and the best bit was planning the catering kitchen.  It used to be a 1-bedroom apartment with a kitchen, sitting room and bathroom.  The walls, ceiling and fittings were removed to reveal a large, light and airy space with wooden beams and a truss dating back to about 1830.  It was amazing to think that when our joiners made another truss to match the original they were doing exactly the same calculations as the joiners in the past, although with different tools!

The stainless steel sink, moveable units and wall cupboards were tailor made and fitted for us by a local firm, as well as a commercial dishwasher which is economical on water use.  We have 2 Neff double ovens, ceramic hobs with 8 rings, and self-closing solid oak drawers and storage cupboards fitted by another local firm.  By far the very best fitting in the kitchen is the beautiful Burlington blue slate worktop.  It’s our little piece of Lakeland from the quarry I passed every morning on the 10-mile bus journey to school in Ulverston in the 1970s.  It took 3 months to find the perfect piece which was then sliced in two, jointed, shaped and polished.  It took 4 workmen with steel toecaps to lift the 2 pieces into place.

Over the next few years we plan to start making best use of our large garden to grow as much veganic produce for the kitchen as possible.  Many of the borders are overgrown and will need lots of attention but we have already planted some fruit trees, fruit bushes and a herb garden, installed 2 sheds, 2 compost bins and our next target is rainwater harvesting for the allotment.

Prior to our 17 years’ experience of running the B&B we both had previous experience in the catering trade, which has proved invaluable.  Between us we hold City & Guilds qualifications in Catering, Cake Decorating and the Cordon Vert Diploma.                      Sylvia Wilkinson
